When I was grow up , my founding father ’s friend , Richard Pastecki , grew lots of eggplant . He did not wipe out them grilled or in salads , and it would never have occurred to him to use them in something as unfamiliar as ratatouille . Richard Pastecki raise eggplant for only one reason — Eggplant Parmesan .

In the Pastecki home Eggplant Parmesan was taken very seriously . Richard ’s wife , Rose , who process full time while raising the couple ’s three children , spent days on the dish , slit the eggplant , salting it , and stacking it between layers of paper toweling . After all the preliminaries were over , she would layer the vegetable with homemade love apple sauce and Parmesan cheeseflower and bake it . The recipe bring about enough to feed an regular army instantly , plus a large amount to freeze for by and by . I think it is dependable to say that the Pasteckis upraise everything that went into their Eggplant Parmesan except the cow that raise the milk for the cheese .

The Pasteckis grew eggplant ( and love apple , garlic , basil , Cynara cardunculus and a luck of other vegetables ) because they believe that there was no substitute for fresh produce . They used veggie in such quantities that they may also have save a little money , but taste was always the prime consideration .

FRESH VEGGIES - Gardening

Seed and flora merchandisers say that there has been a decline in home veggie gardening over the course of instruction of the last century . Certainly the supermarkets now carry a variety of fruits and vegetables that would have been inconceivable seventy - five or even fifty years ago . The trouble is that much of that produce tastes less like homegrown carrot or cabbages or fleeceable peppers and more like the Styrofoam display tray that cradle them .

The answer to the taste dilemma is at the local farmers ’ market place ( if you have one ) , or , well still , in your own backyard . My unscientific research shows that while few people may have big comprehensive veg gardens , circle of people take the trouble to produce a few limited things that they really care .

Many people in my town , for model , grow tomatoes . I know one char who grows the bantam grape vine variety in pots on her deck so that node can pick and corrode them as hors d’oeuvres during the summertime . Then there is the mother of three who deck her cheery patio with generous tummy of basil . More than one house on my block has an apple or pear tree on the premises , and more than one family actually eats the yield that comes from those trees .

A few weeks ago I interviewed a champion community gardener from a nearby urban area who not only fills her community garden spaces with veg , but borrows a neighbor ’s yard and cultivate a striptease in back of her flat building as well . This passionate nurseryman is not growing prize dahlias or helianthus , she is raise a Brobdingnagian harvesting of produce , especially tomatoes , which she turn into sauce and salsa for the winter month .

My research also turn up a local clergyman who is passionate about the pieplant he originate in his backyard , and every bit passionate about the pies he form with the fresh stalk . At least one councilman in my town has grown his own sweet Zea mays , and another is justifiably proud of her peach tree . What ’s more , I know for certain that a member of the local conservation committee has a raise bed full of good thing in back of his star sign . My neighbor has blackberries , and one of the pillars of the community of interests used to have red razz canes out by the back fence . If you know where to count in this town , you could even discover one or two good citizens with fig trees . People who intend the suburbs are simply hotbed of various kinds of contrariness have it only partially right . We take time out from all that to originate our own fresh vegetable .

I do n’t think that I could emulate Richard and Rose Pastecki and dedicate a substantial parcel of my life to Eggplant Parmesan , but I am certainly going to dry out this year ’s crop of Basil of Caesarea for the winter . I will also bring up at least one pot of tomatoes and fill up mystrawberry jarwith Modern strawberry plants . After all , everyone in Ithiel Town is doing it and citizenry will verbalise if I abstain .
